Toe-mah-toes? Whatever.

This was a big tomato week. I got together with some awesome ladies to do our annual tomato canning project (3rd year!) and we knocked out 160 lbs of jarred wonderfulness. Mmmmm…

And then we got this for our CSA today:

Eggs, apples, parsley, basil, lettuce, chard, zucchini, bell peppers, tomatillos, and lots of tomatoes. Yum.

And with our last CSA we made:

  • bean and cheese enchiladas and turkey enchiladas with green sauce (using the tomatillos from 2 boxes plus some bell pepper)
  • melon : )
  • salads with tomatoes, bacon, and blue cheese dressing
  • sauteed zucchini, potatoes and onion with poached eggs on top
  • caprese salad
  • scrambled eggs with potatoes, onions, bell pepper, and pepper jack cheese
  • turkey soup with zucchini, potatoes, and bell pepper

And other things…
