Tomatillo Salsa

We planted 2 tomatillo plants this year and they were very fun to watch grow. So far we have received 1 full fruit.  1:

And our heirloom purple tomatillo plant from Baker Creek died in the extreme summer weather. Sad.

Luckily! The CSA box this week included a bag of tomatillos.

So I’ll be making salsa.

Take the tomatillos out of their paper skins and slice in half.  Place on a baking sheet with a little olive oil, a jalapeno pepper or two, a white or red onion sliced into quarters, maybe some garlic, and any random tomatoes you are trying to use up.  Roast until it all looks mushy and good.  Puree in a food processor with salt, cilantro if you’d like, and refrigerate before enjoying with chips, in huevos rancheros, or as enchilada sauce.
